Roast Beetroot & Goats cheese salad

Summer is on its way, and I wanted to  share with you and my Personal trainer clients, one of my favourite Sweet & Sour Salads, I love to rustle this up in the evening or lunchtime. To make the recipe more filling please add your choice of Lean Meat or Veg friendly alternative, such as Falafel.  All my family love this recipe and I hope you do too. 🙂

Ingredients

3-4 Fresh Beetroot, Chopped into thick chunks

One bag of Salad Leaves

One Packet of Soft Goats Cheese.

One Packet of Walnuts

Table spoon of Olive/ Coconut oil

1 Teaspoon of Honey

 

Signature Dressing!

3 dessertspoons of Olive oil

1 1/2 dessertspoons of Balsamic vinegar

1 teaspoon of honey

 

Preheat the oven to 180c

Cut up some fresh Beetroot into square chunks, place into a Roasting tin drizzle with olive/coconut oil. Sprinkle with cumin.

Place the beetroot into the oven for 20/30 mins, take out when they soften.

Prepare the salad leaves in a big bowl

Cut up the Goats cheese into small chunks and add the chopped walnuts.

Once prepped, Put all the above ingredients into a salad bowl together

Prepare the dressing by mixing the olive oil, balsamic and honey together in a Bowl.

Pour on top of the Salad and you are ready to serve.
