Plant Based Inspired Recipe…

The latest  Netflix Doc 'The Game Changers',  has spurred a big change in the way we are viewing the Food industry and our own nutrition..

An interesting watch for sure and something to think about, the doc looks at the effects of changing to a  Plant Based diet ...

In my personal opinion Plant Based means, basing my diet around Plants...  Decreasing my Meat and Dairy intake for improved Health & Fitness, as well as impacting the environment less.

Below I am reposting a super tasty Plant based recipe..

This Sweet Potato and Falafel Recipe is soo yummy with many foodies loving these Potatoes for their sweet, tasty and nutritious selves. Packed with fibre when you leave the skins on, antioxidants, vitamins A, C, B and essential minerals.  I mixed this recipe with hummus and ready made falafel to add extra protein, with a small amount of sweet chilli sauce to add an extra kick!

I love this recipe when I'm late back from Personal training clients and need to make something quick, tasty and nutritious.

Ingredients

Serves 1

One Sweet Potato

1-2tbsp of Hummus of your choice

3-4 Pre made Falafel balls

Handful of Salads leaves or Steamed Kale

Tsp of Sweet Chilli Sauce (Preferable)

1/2 Avocado (Preferable)

 

Directions

Prick and cook the sweet potatoes with skins on for 5 mins in the microwave then put in the oven at 200c for 10 minutes or until soft inside. You can also preferably cook in the oven at 200c for 1hour to 45 mins until soft inside.

Heat up the falafel in the oven

Take the potatoes out of the oven serve on a plate, add the hummus and warmed falafel serve with a drizzle of sweet chilli sauce plus some fresh salad leaves or steamed kale.
